Our sourdough starter is doing exceptionally well! This morning when I took the cloth off, the starter grew wonderfully! It was half way up the bowl, fluffy looking and oh so bubbly.
I gave it a stir and you could just watch all the bubbles rising to the surface, popping, which makes this a very active starter — and that’s exactly what we are looking for!
Since I have a lot of starter, I’m making some sourdough cheese biscuits. You can omit the shredded cheese if you like and you can use your favorite cheese as well.
Let’s get started!
Here’s my sourdough starter. It has a lovely pungent smell, distinctive of sourdough. I always give it a stir before measuring out what I need. For this recipe, we need 1 cup sourdough starter.
Add in 1 cup flour, baking powder, salt, honey and butter. Stir until mostly incorporated.
Add in shredded cheese. If it’s a bit dry, add a couple spoons of milk. Once mostly stirred in, it is ready to place on the counter.
Be sure to flour counter before turning dough out. Lightly flour if too sticky. Press flat, fold dough over then press flat and fold dough over again. I do this 3 to 4 times to create layers which helps to make flaky biscuits.
Press out with hands. I leave it fairly thick because my family likes thick fluffy biscuits.
You can use a round biscuit cutter if you like. I just cut it into squares. The corners, I cut into triangles because that’s what my kids asked for! But really, you can cut into any shape.
Place on baking sheet. Brush with melted butter. I melted about 1 tablespoon.
Bake at 400F for 10 to 15 minutes. I baked at 360F for 25 minutes. Enjoy hot with butter.
Sourdough Cheese Biscuits
1 cup sourdough starter
1 cup flour
3 tsp baking powder
1/4 tsp salt
1 tbsp honey
4 tbsp butter, melted
1 cup shredded cheese
Stir everything together. Put dough on floured counter. Pat out with hands. Cut into biscuits. Grease baking pan and sprinkle pan with cornmeal. Place biscuits on. Melt a bit of butter and brush tops of biscuits. Bake at 400F for 10 to 15 minutes or until golden and cooked through.
I made these again when I had leftover ham and put about 2/3 cup chopped ham. so delicious!!
You could also add chives or green onions or dill — that’d be delicious too!
