We have been cooking and baking different recipes gifted to us as a Countdown to December. It’s been so much fun! Today we made Irish Potato Farl.
This is a traditional Irish dish that is simple yet delicious. It is also called boxty, griddle cakes or potato cakes. This is a humble dish usually served at breakfast with eggs, tomato and bacon but can be eaten any time. It’s like a potato pancake and reminds me of the filling of perogies and is so good. It is a great way to use up mashed potatoes.
Let’s get started!
Combine cooked mashed potatoes, flour and seasonings. I often add 3 onion or chives to the potatoes. Sometimes I add cheese and other times I keep it plain. This time I added some leftover peas. It may not be traditional but I like variety!
Stir until a dough ball forms.
Shape into patties or flatten dough ball out and slice into 6 pieces. Melt butter in a hot pan and place patties in pan. Cook until browned.
Flip patty and cook on other side. Remove from pan and continue until done.
Irish Potato Farl
4 cups potatoes
3/4 cup flour
salt and pepper to taste
2 tbsp melted butter
Cook potatoes, drain and let cool slightly before mashing. Add flour, salt and pepper and butter. Stir until a dough ball forms. Flatten and cut into 6 slices. I form into patties, the size I like. Melt butter in a hot pan and cook until browned, flip and cook on the other side.
